Mixture will become coarse and chunky looking.<br \/>\n<\/span><span class=\"s2\">2. <span class=\"Apple-converted-space\">\u00a0 <\/span>Add one egg and almond extract. Mix on low speed until just incorporated.<br \/>\n<\/span><span class=\"s2\">3.<span class=\"Apple-converted-space\">\u00a0 <\/span>Sift together flour, sugar, and baking soda then add to butter mixture at low speed. Mix until just combined.<br \/>\n<\/span><span class=\"s2\">4. <span class=\"Apple-converted-space\">\u00a0 <\/span>Take dough and flatten into a disc and wrap in plastic wrap. Place it in the refrigerator for two hours to chill.<br \/>\n<\/span><span class=\"s2\">5.<span class=\"Apple-converted-space\">\u00a0 <\/span>Preheat oven to 325\u00b0F. Line a baking sheet with parchment paper. Beat other egg in new bowl.<br \/>\n<\/span><span class=\"s2\">6.<span class=\"Apple-converted-space\">\u00a0 <\/span>Roll dough into balls about three-quarters-of-an-inch wide. Place on sheet one inch apart and then press down slightly with your palm to make a coin shape.<br \/>\n<\/span><span class=\"s2\">7. Place almond onto each cookie and lightly press into place, then paint cookie surface with beaten egg using a pastry brush or your finger (this will give the cookie a lacquered appearance once it bakes).<br \/>\n<\/span><span class=\"s2\">8.<span class=\"Apple-converted-space\">\u00a0 <\/span>Bake for 13-15 minutes or until the edges just begin to tan.
