Rinse the turkey. Pat dry with paper towels.<\/li>\n<li>Place 1 tablespoon of butter under the turkey skin.<\/li>\n<li>Pour extra virgin olive oil on the turkey\u2019s skin. Massage so that it\u2019s evenly coated.<\/li>\n<li>Mix all the spices together. Sprinkle evenly over the entire turkey.<\/li>\n<li>Put a\u00a0<span style=\"font-size: 13px;\">whole peeled orange inside the turkey.<\/span><\/li>\n<li>Pour 2 cups of chicken broth into the bottom of the pan. Put the turkey into the\u00a0<span style=\"font-size: 13px;\">preheated oven for 15 minutes. Let the skin crisp (the top begins turning golden\u00a0<\/span><span style=\"font-size: 13px;\">brown).\u00a0<\/span><\/li>\n<li><span style=\"font-size: 13px;\">Reduce the oven to 350\u00ba F\/177\u00ba C and cover the roaster pan with either\u00a0<\/span><span style=\"font-size: 13px;\">a fitted cover or aluminum foil.<\/span><\/li>\n<li>Place a meat thermometer in the thickest part of the breast meat. Refrigerate.<\/li>\n<li>Combine strawberries, raspberries, 1 tbsp sherry and 1 tbsp sugar in a medium bowl. Refrigerate and allow to macerate.<\/li>\n<li>Brush the surface of the cake squares with \u00bd cup cream sherry.
